A Taste of China is a family-run noodle bar at Unit 51 of the Covered Market, on the Market Street side. The Chinese name — 三秦百味 (Sānqín Bǎiwèi, "Three Qin Hundred Flavours") — is the cue: Qin/秦 is the classical name for Shaanxi province in north-central China, and this is a Shaanxi/Xi'an kitchen rather than a generic Chinese one.

The kitchen is known for hand-cut biang biang noodles, rou jia mo (the Shaanxi pan-baked bun stuffed with meat, often translated as "Chinese hamburger"), and scallion pancakes (congyoubing) — Oxford's only Chinese signature-noodle specialist by the market's own count. Eat in at one of a few small tables, take away, or order via Deliveroo and Uber Eats.

Closed Wednesdays. The footprint is small and the queue moves at lunch, so the photo menus in the window are useful for deciding before you reach the counter.
